This small guide will cover how to disable the HUD
Just go to

C:\Users\''username''\Documents\My Games\Borderlands\WillowGame\Config

Inside the folder you will find willowinput.ini

Open willowinput.ini with Notepad

Find a line that says bEnableMouseSmoothing

Under bEnableMouseSmoothing add the line Bindings=( Name="F7", Command="togglehud")

Close and save the changes

And now just go in game and press F7 and your HUD is gone

Press F7 again and the HUD is back.

@flavadabadavab Incredibly late response that you were probably not looking for after 8 years but it would probably still read it. You just probably put it in wrong, as the willow files are incredibly case sensitive

Hey, do You know how to change a colour of a chat in the game? The words are white and it merges into the background.

Thank you for creating this guide. FYI, the only way I could get the binding to work was to place it in DefaultInput.ini within steamapps>common>Borderlands>WillowGame>Config. I don't know why editing WillowInput didn't work. My only guess is that, since I have Borderlands installed on a hard drive other than C:, it cannot read the config file in my Documents folder. Does that make sense?

Time to throw away your heads-up display chip. Dahl will get over it.
