To get the multiplayer achievement you have to invite a Steam friend. If you don't have a friend who also owns DQ2, I'll be happy to help you with that.
For the achievement you can create a map with many potions and tons of gold. There are already maps from other players that are built exactly like this.
All other quests are unaffected and progressing in the story has also no effect on the difficulty of the previous dungeons.
