What happened to typing stuff out?

I really wish there was a text guide, instead of videos only.

I can't find the interface for controlling my settlers except to move them. No planting, logging, mining etc.

Do not focus on getting soldiers. This is uselesss. Only get enough to defend against other nations. Ship combat is the way to go, if you can take out your kings ships, prior to them disembarking the forces on land. If they die on ships, your king loses those units, if you take out his ships, he cannot reinforce from europe, and you no longer have to fight them on land.
