The menu im pretty sure is obscure and I found by accident.
PS4 Controller - LT, X to select and O deselect
Keyboard - 1, Z and X to Select and deselect
Nintendo Switch Controller - ZL, A and B to select and deselect (?)
Xbox One Controller - LT, A and B to select and deselect

LT brings up the menu for me on WIN10 but there is nothing about controller or keyboard configurations and the button configuration changes do not hold between the Options Menu and Gameplay inside the games themselves.
Sad, I really wanted to play these again.

well if i press 1 it'll go to the options menu, still can't press the play button in it. or i'm really dumb too, i guess, but it's not working tho.

Bloodlines/New Generation's controls can be changed in the options menu in the game in the main menu, but you cannot assign other keys that are not the few the emulation has set already to your keyboard (Button A will always be keyboard A,Button B will always be keyboard Z, Button C will always be Keyboard C) you can change the controls by hitting right/left on the arrow keys.

Hmm... How can I change control mapping for my keyboards for Castlevania Bloodlines? I press 1 for Option menu, but there's no Control settings.

unfortunately you cannot do that in-game, but if you're on windows, at least, you can right click the volume button and click "Open Volume Mixer" and then crank down the volume for Castlevania.
