Maguire (if he counts) and Fitzgerald you'll likely unlock through regular gameplay, the Landlord and the Farmer's names don't change, and you can't talk to the Fiddler, so it's just Doyle, O'Brien and Pat that seem to matter. Doyle and O'Brien I think can be gotten easily enough (will have to repeat to get the specifics), only Pat is the difficult one, so using the towel on the Landlord was how I also unlocked it, if there even is another way to do so.
