I have a theory that stability might depend on the Steam Deck version. For example, I’m using the OLED model and everything works fine, but older models might have overheating issues that could cause crashes or freezes. If you’re also on the OLED version and still experiencing problems, then the cause might be something else
For example, maybe there shouldn't be any custom changes to the processor speed or other settings, so there are no freezes. For this game, I don't have any such options enabled when I press the button with the three dots. However, I do have the maximum frame rate set to 60 (60 Hz) there
Using the settings from the guide, freezes is almost gone and the game runs smoothly. However, if you just set everything to low without following the guide, freezes happen more often, especially when elite enemies like flamethrowers and grenadiers appear, as they seem to put more load on the visuals.
