1) Before taking the order(waiting line)
Customer's patience duration per difficulty level:

Easy: Infinite patience
Normal: 2min 45s
Hard: 2min 10s
Very Hard: 1min 50s
Nightmare: 1min 15s

That was counted from the time they arrived, until they left.
2) Waiting for the order to arrive at the table
After taking the order, time limit will reset, and you'll have more:

Easy: Infinite patience
Normal: 3min 30s
Hard: 2min 35s
Very Hard: 2min 05s
Nightmare: 1min 30s

That was counted from the moment I took the order in the cashier, until they got up and left the restaurant.
3) Drive thru customers
Here thing's got serious! Drive thru customers patience time it DOESN'T resets, so you have only one time limit to pick up their orders and deliver the bag with all the items, in this case you should consider the same times of section 1:

Easy: Infinite patience
Normal: 2min 45s
Hard: 2min 10s
Very Hard: 1min 50s
Nightmare: 1min 15s

That was tested by waiting to take the order for 1min in every difficulties, then he left after the remaining time, so it proves time in this case doesn't resets.
