This is a quick informative guide for the bosses of Darkest Dungeon.
This is a work in progress and input/corrections is welcomed at my descretion.
HP values for bosses may be incorrect as I'm recalling these values from memory.

Special enemy trait/tactic
The Hag is accompanied by a cauldron. She has a special attack call "Put into Pot". This special attack takes one random hero and puts them into the cauldron for 4HP DMG every turn that they are trapped in it. To free the trapped hero, you must bring the cauldron's HP to zero from 15. Both the Cauldron and Hag are a 2 space enemies. You only need to kill the Hag who sits in the 3rd/4th position.

Special enemy trait/tactic
Ignore the small pig, Wilbur who is in the 4th position. If you attack Wilbur, the Swine Prince (takes up the 1st to 3rd) will retaliate with an attack that is capable of stunning your entire party in one single attack. (Thanks to Chompolon)

News bosses from latest update:

Prophet:
- Has a falling rock attack that has fairly high damage
- Failing rock attack highlights intended target 1 turn before falling
- A unit with high PROT or a MAA is highly recommended
- Need to target 4th slot to kill

Flesh:
- Most difficulty of the new bosses
- Appears that you can only do guarantee damage against the heart
- Attacking other parts may or may not do damage
- Heart location changes every round and you should be able to target all slots
- The toughest part of this boss fight is that the heart doesn't appear in some rounds

Cannon:
- Has a bombard attack that does massage damage to all units
- Appears that this attack can only be initiated by the pyro unit
- Killing (and stunning?) the pyro unit will prevent it from using the bombard attack
- Boss also has ability to summon reinforcements

FLESH is tricky but very beatable, 4 active pieces means mass applying bleed and blight while staying alive is very effective. I reccomend a jester playing solo, and when save using rake, houndmaster biscuit+mass bleed, and plague doctor blight. This worked very well for me

For the Hag boss fight, the cauldron will release the trapped hero once it reaches deathdoor, Also, if three of your heroes die and the last hero is trapped in the cauldron (even if the hero is full hp) the fight ends and the hero is done for.

Just had a fight vs Flesh.
You can attack and damage all parts!
Dealing damage to whole body.
Best chars for this raid would be:
Crusader, 2 Hightwaymen, Occultist.
All gotta be equiped with AOE skills:
Zealous Accusation, Grape-shot, Eldrithc Artilery.
If Shoota-git is buffed like hell, and got a belt trinket for crits and damage,
Flesh goes in a blink of an eye.

The general strategy for the cannon is to try and kill the pyro unit and hope the cannon can summon a fusilier up front so it can't blanket fire at you. Then you can simply trade off from killing the pyro unit and hitting the cannon each turn. Done with a Man at arms giving dodge buffs the entire fight + vestal + 2 highwaymen
