The immune perk protects your survivor from dying to a zombie bite, only skeptic will prevent the cultism.
Just prevent your survivor from spreading the cult too much, sooner or later you should be able to clean him, or may not have to worry about it.
If you need to group him with others for battles, then make sure to have a dispensable group ready that is allowed to be converted without hitting the 50% triggers.
Easier dealings with this particular nuts faction isn't really a reason for me to keep some of my own. (When I saw the guide title I thought it was about how to get rid of the pests among my own people, wondering whether you mention putting them in bars, or if there's an even quicker way.)
Curious though, do the cultists ever decide to worship Jenkins? (I got him in current (done) city, going to take him to next city.)
