Because the enemy won't play by your rules and sometimes you'll have to throw them into the range of some archers or raiders or whatever and you'll need them to survive long enough to drop their bombs and HOPEFULLY get back out again.
Speaking of cavalry, Gyros are pretty much the Dwarve's tactical response to a lot of the situations you'd use Cavalry for. They can redeploy quickly, they deal massive moral damage, and they are damn hard to kill without exactly the right kit. They're less flexible than charge or melee cavalry, and you don't want to throw them at ranged units like you would throw normal cavalry, but sometimes all you need is a massive burst of moral damage in one place very very quickly to turn the tide.
Basically, a Gyro is an untouchable ranged turret with some nifty shit that lets them deal rediculous amounts of moral damage and even if you don't use them to up and out kill stuff, they're one of the best units for keeping stuff running away rather than rejoining the fight. Plus I favor them for their ability to just utterly destroy enemy artillery if the enemy is stupid enough to leave it unsupported.
